Football chocolate covered strawberries


It’s game time again, so I decided to share this recipe for some yummy chocolate covered strawberries that are decorated in football glory 🙂

Here’s what you need:
Strawberries(bigger ones are easier to work with)
A bag of milk chocolate chips
White icing
Wax paper

Here’s what to do:
pour your chocolate chips into a microwave safe bowl
microwave at 30 second intervals stirring after each 30 seconds, until there are no more lumps
Dip your strawberries into the chocolate and set on waxed paper
Use a ziploc bag(cut a small piece of one corner) or icing bag(with a number 2, 3, or 5 tip)
Fill the bag 1/2 way with the icing
Squeeze a line up the strawberry and then smaller lines across

Caramel Apple Pecan Pie


This is one of my favorite pies to make at Thanksgiving.

What you need:
1 9 inch deep dish pie crusts, you can use your own recipe or buy the frozen crusts at the store

61/2 cups of sliced apples, I like to use Granny Smith since the rest of the pie is so sweet, but you can use any type you like
3 Tbsp of flour
1/3 cup packed brown sugar
2 tsp cinnamon

1 cup brown sugar
1/2 cup rolled oats
1/2 cup flour
8 TBSP butter

1/4 cup Caramel Sauce(you can make your own or use jarred caramel sauce( I prefer to make my own, but it is definitely easier to use the store bought)


Preheat oven to 375
Prepare your pie crust
Put your apple slices in a large bowl then add the rest of your filling ingredients tossing it to make sure all of the apples are coated
Put your filling into your pie crust
In a large bowl mix your sugar, oats, and flour then cut in the butter, the topping will be crumbly
Spread your topping evenly over the filling

Bake for 25 minutes
Take pie out and sprinkle pecan halves on top

Bake another 25 minutes (You may want to cover your edges with aluminum foil at this point so they don’t burn)

Remove from oven, while still hot pour the Caramel over the top

Let cool so that the caramel hardens some and serve!

Cheesecake Brownie bites


I found these in Family Circle magazine a long time ago, and tweeked the recipe a little, they are absolutely heavenly!

You will need:

13×9 pan
cooking spray

For the Cheesecake:
1/4 cup cornstarch
24oz low fat cream cheese
3 eggs
3/4 cup sour cream
2/3 cup milk
1/2 tsp of vanilla extract

For the Brownie
1 cup salted butter
6 oz unsweetened chocolate
1 3/4 cup sugar
4 eggs
1 3/4 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1 1/2 tsp vanilla extract
12 ounces(1 bag) bittersweet chocolate chips

For the Whipped Cream:
1 small container of heavy whipping cream
1/2 cup of sugar
1/4 tsp of vanilla extract

For the topping:
4 tablespoons of strawberry preserves(I used smuckers low sugar)
optional: sliced strawberries

What you need to do:

Heat oven to 350 degrees
Line a 13 x 9 x 2-inch baking pan with foil. Coat foil with nonstick cooking spray
Whisk cornstarch and sugar
Add cream cheese, beat until smooth.
add eggs, sour cream and milk, mix well,
add vanilla
In a different microwave safe bowl combine butter and chocolate. Microwave for 1 minute, 30 seconds, you can keep going in 30 second increments until smooth
Mix in sugar, then eggs
Mix in flour, baking powder and salt until smooth.
Stir in vanilla and chocolate chips

Spread Brownie batter in pan
Pour Cheesecake mixture over the brownie batter
Bake at 350 for 1 hour 5 minutes until the set
Cool at room temperature for about 1 1/2-2 hours
Cool in fridge for another 2 hours

Make the whipped cream: In a bowl beat heavy cream, sugar and vanilla until desired consistency

When it is all done cooling, cut into squares
Add a spoon full of strawberry preserves and a spoon of whipped cream on top of each one and serve


Simple DIY Egg Mcmuffin


This morning I had an Egg Mcmuffin for breakfast since we are travelling and I love Egg Mucmuffins, however I am not big on getting up and leaving the house super early, spending a small fortune on breakfast, or all the additives that are put in those delectable Mcdonalds Egg Mcmuffins, which is why I prefer to make my own at home 🙂

You will need:
English Muffin(s)
Slice of cheese for each ( I like to use cheddar)
Cooked ham of some sort for each

What to do:

Crack your eggs into a greased muffin tin
Cook at 350 degrees for approximately 15-20 minutes
Toast your english muffin and open your cheese
Place ham on a backing sheet or dish
About 2 minutes before the egg is done put the ham in the oven

No put your ham, cheese, and egg on your english muffin and Enjoy the goodness!

Not so guilt filled chocolate Peanut Butter recipes, and a crazy niece


My niece is always trying to get me to get her ice cream, the girl would probably eat ice cream all day every day if I let her, so this one time I conceded and we went to the gas station to get some ice cream.  I immediately grab for the chocolate peanut butter(If you guys haven’t noticed by now, I am a little more than slightly addicted to that combination)
Me: ooo they have chocolate peanut butter
Her: We could go to the other gas station and check
Me: You don’t like chocolate peanut butter?
Her: Not really, I really don’t care for chocolate
Me: Ok fine we will go to the other gas station
Her: K

We drive over to the other gas station

*she immediately grabs a small thing of chocolate peanut butter…WAIT WHAT? DID I MISS SOMETHING? We’re we conversing in different languages that only sound alike?

Me: I thought you didn’t like chocolate peanut butter, you make me go to a different place because you didn’t want chocolate peanut butter, and now you pick chocolate peanut butter
Her: (As if that is not the least bit crazy) Ok I’ll pick something else
Me: k

*She reaches in and grabs Chocolate Marshmallow…ARE YOU FUCKING SERIOUS? What happened in 5 minutes to the girl that didn’t care for chocolate? Am I being punk’d right now? Where’s the camera’s

Me: What the hell, I thought you didn’t care for chocolate
Her: I like this

OK whatever, I give up, clearly she is happy with her choice, for all I know aliens abducted her for 10 minutes then returned her without me ever realizing it, That has to be the only reasonable explanation right?  Because any other explanation may have me driving her to the nearest mental facility, do not pass go, do not collect $200…nada

I grab a bag of Peanut Butter M&M’s and put them on the counter too, she slaps up a bag of skittles
My mind says something like this: Why sure I will buy you some skittles, anything else princess?

Walk out of the store I open my bag of M&M’s put 1 in my mouth and she holds out her hand…
Wait a minute I buy you ice cream and skittles and you still want to steal my chocolate? The whole point of me getting this chocolate was that my munchkins weren’t with me and I could scarf it down before they even knew I had it(and I didn’t have to hide in a closet)

I stayed strong people, she did not get my M&M’s and somehow I managed not to strangle her before we got home.

Now if you are like me  and want to watch your figure(don’t judge from my moment of peanut butter M&M weakness lol), but still enjoy some yummy  peanut butter and chocolate combinations You will love my Less Guilt Chocolate Peanut Butter Recipes on pinterest (With all the yummy chocolate peanut butter recipes I have found so far, that may not add 10lbs to your hips) You’re welcome 😉

And this is my very favorite cookie recipe, Peanut Butter Chocolate No Bakes, I got it from my mom, so I am not sure where she got it from, but they are lower in fat and calories than most cookies, but taste DELICIOUS:


You Need;
1/2 stick of butter
1 cup of sugar(you can use sugar substitute if you prefer, but I find it to taste a little funny when done)
1/4 cup of milk
1 1/2 Tbsp of cocoa
1/2 cup creamy peanut butter
2 cups of regular oats
Waxed paper

To make:
In a large saucepan, add butter, sugar, cocoa, and milk and bring to a boil
As soon as it starts to boil take the pan off of the heat and add peanut butter stir quickly and then add oats
Drop by spoon fulls(smaller ones take less time to set, but you can pretty much do any size you prefer) onto waxed paper
Put in the fridge and let set until firm


Simple Summer Dinner and Dessert


Who loves to eat? You? Me too!  Who has extra time? No not you? Me either!

That is why this meal is so perfect, it’s quick, easy and delicious.

First Course:
meat and cheese salad

A Simple Salad:
Here’s what’s in it:
Iceberg lettuce
Black Olives
(we added croutons as well but didn’t get a picture of that)

Then after a light dinner you deserve a dessert, Am I right?

The Simple DIY ice cream sandwich

Here’s what you do:
Bake your favorite Chocolate Chip cookies, or use the refrigerated dough, or heck if you are really short on time you can even use the soft baked already made chocolate chip cookies

If you baked them, be sure to let them cool

Fill with your favorite vanilla ice cream of frozen yogurt

And there you have it a dinner and dessert in just a few minutes 🙂 ENJOY!

Pizza Bake Recipe


This is one of our go to meals when I am busy.  It is quick, easy and tasty!

What you need:
Bisquick baking mix
Pizza sauce
Pizza toppings of your choice(I have found that vegetables have a tendency to make it a little watery)
Mozzarella Cheese
square or rectangle baking dish

Preheat oven to 375
Prepare biscuits dough according to Baking mix instructions
Drop by teaspoon full on the bottom of your pan (They do not need to be touching since they will expand)
Layer sauce over the dough(as little or as much as you want, although keep in mind some will absorb into the dough, I am a light sauce kind of person and needed to add about 1/4 cup more than normal because of this)
*Yea if you haven’t noticed by now this recipe is definitely not technical*
Now layer on some toppings
Then some cheese
Then more biscuit dough, sauce, toppings and cheese

Cook at 375 for about 35 minutes or until dough is fully cooked 🙂

Peach and Berry Cream Tart


I was invited to my sisters the other night for dinner and was in charge of dessert, and this was the perfect summer dessert!

What you need:
54 nabisco tea biscuits
1 stick of melted butter

1 package of cream cheese
1 cup of cold heavy whipping cream
1/3 cup of sugar
1/4 cup of confectioners sugar
1/4 cup fresh squeezed lime juice

2 tablespoons and 1 teaspoon of sugar
3 medium size ripe peaches
1 medium container of blueberries
about 10 strawberries

5 year old helper: optional

Here’s what ya do:

First set out your cream cheese so it gets to room temperature (we forgot this step and ended up having to take a break between the crust and filling, which didn’t set well with the 5 year old helper)

Preheat oven to 400, this is important folks, even I like to slack because I am impatient, but it won’t come out right if you do not preheat your oven

Add your tea biscuits to a food processor and process until it is crumbs

Add the stick of melted butter and process again

Dump the crumb mixture onto a small cookie sheet and spread it out

now turn down your oven to 375 and bake your crust for 8 minutes

While your crust is baking unlike me you will be able to whip up your filling, since you took your cream cheese out before prepping the crust, if you are like me, well sit back and put your feet up while you watch your crust cook

Mix the cream cheese and both sugars together on medium until creamy
Add the heavy cream and mix on high about 3 minutes
Add the lime juice and mix another 1 minute on high

Once the crust is done baking and the filling is ready, spread the filling over the crust and refrigerate at least 4 hours

(If you have opted for the 5 year old helper….hand beaters over because they will probably want them)

About 15-20 minutes before you are ready to serve:

Slice up your peaches and add 2 TBSP sugar and mix

Add 1 TSP sugar to your blueberries

Dice your strawberries

Let the fruit sit in the sugar for about 10 minutes(except strawberries) and minus the pieces the 5 year old helper thinks she is sneaking

Add the fruit to the top of your filling and you are all done


Dark and Milk Chocolate Toffee Cupcake

I told you what kind of cake I used and how to make the ganache in my post for Reese Cupcakes  The only difference here is I used half dark chocolate and half milk chocolate chips for the ganache

You will also need Dark chocolate Toffee bars. I used Ghiradelli, because they are so delicious.

So you make the cupcakes the exact same way, and the ganache with the changes I mentioned.  I did not fill the cupcakes so these are even easier>

Once everything is made and cooled to room temperature just like in the Reese’s cupcakes you take the cupcake dip it into the ganache and top with half of a Dark chocolate toffee square
