Reeses Cupcake

Another yummy cupcake recipe I wanted to share with you all!

Who doesn’t love Reeses? I don’t think I can be friends with someone who doesn’t like Reeses, on second thought let’s be friends that way I don’t have to share!

I obviously am a huge fan of the reese cup, and so naturally I am a big fan of these cupcakes.

You will need:
Chocolate Cupcakes(see below)
Peanut Butter Icing(butter, cream, peanut butter, and confectioners sugar) (see below)
A 12 ounce bag of chocolate chips/or other chocolate
A small container of heavy whipping cream(about a cup)
optional: flavored Liqueor
1 mini reese cup for each cupcake

This makes 24 cupcakes

I used my own chocolate cake recipe, but you can also use your favorite from scratch recipe or a box cake mix.  Mine comes from an old Dessert cookbook that was my Mom’s

I then fill the cupcakes with peanut butter icing
You can find the recipe I use here

Now for the topping I used Chocolate Ganache,  I love Chocolate Ganache, I prefer it over any icing except peanut butter.

To make the Ganache, you need:
A bag of chocolate chips, or 12 ounces of the chocolate of your choice (If I am feeling the need for decadence I use Godiva, for this particular batch I used Nestle Tollhouse chocolate chips)
A small container of Heavy Whipping cream (about 1 cup)
I also like to add 2 Tablespoons of liqueor, for this I used chocolate, but it is not necessary

Put chocolate chips(or if you used another chocolate chop it up) in a medium sized bowl
In  a sauce pan, heat cream on medium/high until it starts to boil
Once the cream begins to boil, dump it over your chocolate and mix until it is completely melted and looks shiny,
Allow to cool to room temperature, at this pint you can add your liqueor if you have chosen to use it

Now to construct the delicious cupcake:
Fill each cupcake with some peanut butter icing ( I use a filling tip, but you can also cut a small chunk out of the middle of the cupcake and spoon some icing in, if you do that for this recipe, make sure to add a piece of cake back on top of the filling, so that the ganache does not melt into it)
Take the cupcake and dip it into your bowl of ganache, just enough to cover the top
Add a mini reese cup to the top

And that’s it!

Delicious filling in just a few minutes

I love filling in cake, it makes it taste so much better, and I tend to get bored easily so I am always looking for new fillings.  This filling is chocolate strawberry
chocolate strawberry filling

What you’ll need:
A package of instant chocolate pudding
Fresh Strawberries

What to do:

It’s pretty self explanatory but in case you must have the directions, ya just make the pudding according to the package directions and let it get firm, then slice up strawberries, mix them into the pudding and put smack dab in the middle of your cake!

Easy Peasy! Enjoy

Jello Lemons and Oranges

Jello is such a fun food, and you can do so many things with it. One of my favorite things to do is fill lemon and orange peels to look like slices of the actual fruit.

Jello oranges

These are perfect for a BBQ, potluck, or even if you want a twist on jello shots! The bonus is it’s pretty simple!

Here’s what you need:
Jello(I used one package of orange, and 1 package of lemon)
Oranges and Lemons

You could also do just one or the other, or by all means use a lime

Here’s what ya do:
Slice the lemon or orange in half
Scoop out the inside of the fruit (I then like to eat the orange, and save the lemon for my water)
Now you have orange and lemon Halves, arrange these in a dish or on a cookie sheet
Prepare the jello according to the jigglers recipe
Pour the jello into the fruit halves
Let sit and get firm in the fridge
When they are firm, cut into slices and serve

If you are adventures you could always add a little shot of something 😉

I originally got this recipe from a friend who got this online, I am unsure if it is someone else’s recipe, or Jello’s recipe, I have been making these for years 🙂

Honeybee flower party

I live for birthday parties, seriously I love them, and I go crazy on them because I love them.  That doesn’t always mean I spend a ton, a lot of things can be done for very little.
For my daughters 3rd birthday I asked her what she wanted on her cake so I could plan her party around that. She told me she wanted a bee and a flower, and so the honeybee flower party was created
I wanted to share with you guys a few ideas that we used.
We bought a bee stamp and then dollar store cups and napkins and stamped each one, then bought just color matching plates and silverware
I made Honey bee peanut butter and honey sandwiches(if you are throwing a party that involves children under one, you could just use another type of sandwich but the honey and peanut butter went cute with the theme)
To do this I purchased a bee hive cookie cutter (you can find them all over etsy), and sugar bees sold at Hobby Lobby or Michaels
I then used the cookie cutter to cut all of the bread, and proceeded to use the bee hive shaped bread to make peanut butter and honey sandwiches

when I was done I added a sugar bee to each one

I made the cake myself, it is all icing, except for the flowers which are fondant and I used the Wilton mini teddy bear pan to make the bee

I also cut all of the fruit in the shape of flowers using a flower cookie cutter

The party was a huge hit, hope you enjoy the ideas. And if you haven’t seen it, check out the art birthday party we did here and the ocean theme party here

Goldfish Cracker Bacon Sliders

I almost always put crackers in my hamburger before making burgers, it helps them stick together, and I think it tastes better.  I was getting ready to make sliders and realized we were out of crackers, but I have a 5 year old, so we always have goldfish crackers around.  That is how the goldfish cracker bacon sliders were born.  I figured why not, crackers are good in burger and cheese is good in burger, couldn’t hurt right?  Well it ended up tasting so much better than regular crackers, and I will from now on put goldfish crackers in my burger.

Here’s what you need:
Hamburger(I used 85/15 fresh ground burger because I always get my ground beef ground fresh at a butcher, but any burger would work)
Original Goldfish Crackers
A-1 Steak Sauce
Cheddar Cheese
Potato rolls(small if you are doing sliders, although you could also do regular burgers like this)

Whatever toppings you like, I used pickles and mustard, C had pickles, mustard and tomatoes, A had lettuce, and My dad had lettuce, pickles, and mustard

How to make them:

Put your burger on a plate, dump some A-1 sauce on top(no science here, just pick an amount that you like)
Mix it up
Add crumbled Goldfish crackers(I used my hands but you could use a ziploc bag, or a processor)
Mix it up

Form mini patties, (I used a ball a little bigger than a golf ball)

Cook bacon(I make mine in the oven, to do say lay flat on a baking sheet or on a rack sitting on top of the baking sheet, bake at 350 for about 20 minutes)

Set grill to Medium high
Grill burgers flipping 4 times, on Medium high heat for about 15 minutes(this will depend on how you like your burgers cooked)
2 minutes before they are done, add cheese

Now just fix your burgers however you like them, and Enjoy!

Cookies and Cream Oreo Cupcake

One of my husbands favorite things is Oreo’s, so this was inspired by him.  To make it easier and because I was adding so much anyways I used box white cake mix which simplified a lot and you couldn’t tell, Did I mention there is an actual cookie in the middle of the cake? That is my kind of recipe, especially when I don’t have a lot of time.

Cookies and Cream Oreo cupcake

Cookies and Cream Oreo cupcake

Here’s what you need:

White or Vanilla box cake mix (I used duncan hines)
Ingredients called for on the box mix
Oreo Cookies (2 1/2 per cupcake)
Buttercream Icing( you can use the store bought kind or make your own, There are plenty of butter cream recipes out there, I used Wilton Buttercream)
2 Hershey cookies and cream bars

Here’s how I made them:

I mixed the box mix with the ingredients called for, pretty basic
I put cupcake wrappers in the pan, I used white since it goes with the oreo theme, although you can use any color or none at all
I then filled each 1/4 full
Add a tasty oreo cookie
Continue filling with mix until they are about 3/4 fill
Bake according to directions on box

While I was waiting for them to bake, I made my icing, and I added a little extra water to make the icing thinner.  Then I put 1/2 oreo for each cookie in a Ziploc bag, then came the fun part, crushing the cookies, I like to throw them around a bit and smash them with my hands although I am sure you could also blend or process them until they look like crumbs, how crushed you want them is totally up to you

When cupcakes are cool, add icing, I used a spoon and kind of just spread it around nice and thick.
Sprinkle on some oreo crumbs
add 1 oreo cookie and 1 section of your cookies and cream bar

Eat your cupcake, or take a picture and show it off to your friends Enjoy!

My take on Chocolate Covered Banana Cupcakes

My family loves chocolate, and banana’s and so of course love chocolate covered banana’s!
Meet my version the Chocolate Covered Banana Cupcake

chocolate banana cupcake

What you need:

  • 1 cup of white sugar
  • 1/2 cup cocoa powder(I used 1/2 black onyx which is a darker cocoa, and 1/2 regular sweetened cocoa powder for a stronger flavor but you could probably use all regular unsweetened cocoa powder as well)
  • 1 cup cake flour
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt(you can also use table salt)
  • 1/2 tsp baking soda
  • 1/2 cup whole milk
  • 1/2 cup of vegetable oil
  • 1/2 tsp vanilla
  • 1/2 cup boiling water
  • large egg

  • 1/2 cup banana’s mashed
  • 1/4 cup butter softened
  • 3 cups confectioner sugar
  • 1/4 tsp vanilla

To make cupcakes, mix all dry ingredients until well blended, then add the milk, vegetable oil, vanilla, egg, and boiling water, Beat about 1-2 minutes on medium

Put into well greased cupcake pans or cupcake liners
Bake at 325 12-14 minutes or until a toothpick comes out clean

To make the filling and icing mix together all ingredients and blend well

When Cupcakes are finished baking and cooled you can either fill them using a cupcake fill tip or you can cut a little chunk out of the center of each cupcake and fill with icing
Then top with the icing using a spatula(The icing will not be really thick that is ok)

As an added bonus I used hershey’s syrup to swirl the top of each cupcake and then added chunks of banana
(this is optional and if you choose to do it should be done right before serving)

Hope you enjoy, if you make them please let me know what you think, I love comments 🙂

Low fat Low Cal Chocolate Cupcakes

I am not feeling well today, double ear infection, and tired, but I did want to get a post out, and maybe If I am feeling better tonight I will post something else, For now I wanted to show you a quick easy way to make low cal low fat cupcakes, that taste just as good as full fat cupcakes(I promise) unless you seriously miss icing and then there might be trouble 🙂 My family at the crap out of these and none of them like one of the 2 ingredients so give it a try, you might be surprised

You need only 2 ingredients (If you want you can also add powdered sugar or cool whip to the top in place of icing)
A can of soda, and a box of cake mix
For this I used Diet coke, and Mrs Fields Chocolate cake mix

If you are completely against diet soda, using regular soda would still make them low cal and low fat, just a few more calories but when you separate it into servings it’s not bad

Because I used a smaller cake mix I only needed half a can of diet coke, If you use a regular box cake mix you will need the full 12oz can

Here’s what you do:
Mix the cake mix and the diet coke(Do not add the ingredients called for in the cake mix)
Pour into lined cupcake tins and bake at the same temperature called for on the box about 2 minutes less than what is called for on the box until a toothpick comes out clean when inserted

I chose to sift a little powdered sugar on top of each cupcake and they were delicious

These recipes are all over pinterest so I honestly have no idea who came up with the idea originally, but if it was you please tell me so I can tell you how much I love you!

In a large bowl :
Layer 1- Angel Food Cake(1/2 of it)
