Another yummy cupcake recipe I wanted to share with you all!
Who doesn’t love Reeses? I don’t think I can be friends with someone who doesn’t like Reeses, on second thought let’s be friends that way I don’t have to share!
I obviously am a huge fan of the reese cup, and so naturally I am a big fan of these cupcakes.
You will need:
Chocolate Cupcakes(see below)
Peanut Butter Icing(butter, cream, peanut butter, and confectioners sugar) (see below)
A 12 ounce bag of chocolate chips/or other chocolate
A small container of heavy whipping cream(about a cup)
optional: flavored Liqueor
1 mini reese cup for each cupcake
This makes 24 cupcakes
I used my own chocolate cake recipe, but you can also use your favorite from scratch recipe or a box cake mix. Mine comes from an old Dessert cookbook that was my Mom’s
I then fill the cupcakes with peanut butter icing

Now for the topping I used Chocolate Ganache, I love Chocolate Ganache, I prefer it over any icing except peanut butter.
To make the Ganache, you need:
A bag of chocolate chips, or 12 ounces of the chocolate of your choice (If I am feeling the need for decadence I use Godiva, for this particular batch I used Nestle Tollhouse chocolate chips)
A small container of Heavy Whipping cream (about 1 cup)
I also like to add 2 Tablespoons of liqueor, for this I used chocolate, but it is not necessary
Put chocolate chips(or if you used another chocolate chop it up) in a medium sized bowl
In a sauce pan, heat cream on medium/high until it starts to boil
Once the cream begins to boil, dump it over your chocolate and mix until it is completely melted and looks shiny,
Allow to cool to room temperature, at this pint you can add your liqueor if you have chosen to use it
Now to construct the delicious cupcake:
Fill each cupcake with some peanut butter icing ( I use a filling tip, but you can also cut a small chunk out of the middle of the cupcake and spoon some icing in, if you do that for this recipe, make sure to add a piece of cake back on top of the filling, so that the ganache does not melt into it)
Take the cupcake and dip it into your bowl of ganache, just enough to cover the top
Add a mini reese cup to the top
And that’s it!
