Quick Easy Memorial Day Dessert


My munchkins and I are going up to my sisters to have a BBQ with the family, and I always like to have a special red, white, and blue dessert on Memorial Day, so I whipped up this simple parfait


 What you need:
Angel food cake, either home made or from the grocery store
1 pint of blueberries
2 pints of Strawberries
Cool Whip(I used extra creamy)

What to do:

Chunk up your angel food cake
Wash and Dice strawberries
Wash Blueberries
In a large bowl :
Layer 1- Angel Food Cake(1/2 of it)
Layer 2- Cool Whip(thin layer enough to cover the cake so it doesn’t get soggy from the fruit)
Layer 3-Diced Strawberries
Layer 4- Angel Food Cake (the rest)
Layer 5- Cool Whip (again enough to cover the cake)
Layer 6- Blueberries


A twist on Strawberry shortcake 2 recipes


With Memorial day around the corner I wanted to share another easy recipe or 2 with you that is sure to please:


Individual strawberry shortcake with home made whipped cream:You will need:
Grands biscuits
1 pint of strawberries
small container of heavy cream

To make this:

1. Our some sugar into a bowl
2. Open the biscuits and roll the top of each biscuit dough in the sugar then place on baking sheet
3. Bake biscuits according to package directions
4. in another bowl slice strawberries, and add 1/4 cup of sugar(you can do more or less depending on tastes) Set Aside
5.In a 3rd bowl dump in the entire container of heavy whipping cream, add 1/4 cup sugar and 1/4tsp Vanilla, Beat with a mixer on medium  until desired consistency (refrigerate until ready to use)
6. After the Biscuits have came out of the oven and cooled slightly cut them in half
For each shortcake:
Put bottom 1/2 of  1 Biscuit down
spoon on whipped cream, the strawberries
Top with sugared half of biscuit

For those of you who are tiring of individual Strawberry Shortcakes, let me introduce you to my very own Strawberry overload cake:


I tried to make an easier recipe than my normal strawberry cake, so that my children could do it with me, and this was perfectWhat you’ need:
A round cake pan, and cupcake pan or any other baking pan
white cake mix
Duncan Hines strawberry frosting mix in
3 cups of fresh strawberries
Strawberry icing
Vanilla icing

What to do:

1. Ahead of time, dice 2 1/2 cups of stawberries and Puree or blend the other 1/2 cup of berries
2. Prepare 1 cake mix according to directions, then add in the strawberry frosting mix in and the blended strawberry
3. Prepare second cake mix according to package directions
4. Put the add in cake mix into 2 greased round pans and the white mix into cupcake pan or 3rd greased baking pan and cook according to package directions
5. cool the cakes
6. take the cupcakes and crumble them using your hands, to get big cake crumbles
7. put first round cake down and spread a thin layer of vanilla icing onto it
8. put the other round cake on top of the first
9. Ice the entire cake in Vanilla icing
10 Using your hands stick the cake crumbles to the side of the cake
11. Using a baggy with the corner cut out, or an icing bag with a star tip swirl strawberry icing on the top of the cake around the edges  creating a bowl in the center of the cake
12.  Add the diced strawberries to the top center of cake until it is full
