Cheesecake Brownie bites


I found these in Family Circle magazine a long time ago, and tweeked the recipe a little, they are absolutely heavenly!

You will need:

13×9 pan
cooking spray

For the Cheesecake:
1/4 cup cornstarch
24oz low fat cream cheese
3 eggs
3/4 cup sour cream
2/3 cup milk
1/2 tsp of vanilla extract

For the Brownie
1 cup salted butter
6 oz unsweetened chocolate
1 3/4 cup sugar
4 eggs
1 3/4 cups flour
1 1/2 tsp baking powder
1/4 tsp salt
1 1/2 tsp vanilla extract
12 ounces(1 bag) bittersweet chocolate chips

For the Whipped Cream:
1 small container of heavy whipping cream
1/2 cup of sugar
1/4 tsp of vanilla extract

For the topping:
4 tablespoons of strawberry preserves(I used smuckers low sugar)
optional: sliced strawberries

What you need to do:

Heat oven to 350 degrees
Line a 13 x 9 x 2-inch baking pan with foil. Coat foil with nonstick cooking spray
Whisk cornstarch and sugar
Add cream cheese, beat until smooth.
add eggs, sour cream and milk, mix well,
add vanilla
In a different microwave safe bowl combine butter and chocolate. Microwave for 1 minute, 30 seconds, you can keep going in 30 second increments until smooth
Mix in sugar, then eggs
Mix in flour, baking powder and salt until smooth.
Stir in vanilla and chocolate chips

Spread Brownie batter in pan
Pour Cheesecake mixture over the brownie batter
Bake at 350 for 1 hour 5 minutes until the set
Cool at room temperature for about 1 1/2-2 hours
Cool in fridge for another 2 hours

Make the whipped cream: In a bowl beat heavy cream, sugar and vanilla until desired consistency

When it is all done cooling, cut into squares
Add a spoon full of strawberry preserves and a spoon of whipped cream on top of each one and serve


Goldfish Cracker Bacon Sliders


I almost always put crackers in my hamburger before making burgers, it helps them stick together, and I think it tastes better.  I was getting ready to make sliders and realized we were out of crackers, but I have a 5 year old, so we always have goldfish crackers around.  That is how the goldfish cracker bacon sliders were born.  I figured why not, crackers are good in burger and cheese is good in burger, couldn’t hurt right?  Well it ended up tasting so much better than regular crackers, and I will from now on put goldfish crackers in my burger.

Here’s what you need:
Hamburger(I used 85/15 fresh ground burger because I always get my ground beef ground fresh at a butcher, but any burger would work)
Original Goldfish Crackers
A-1 Steak Sauce
Cheddar Cheese
Potato rolls(small if you are doing sliders, although you could also do regular burgers like this)

Whatever toppings you like, I used pickles and mustard, C had pickles, mustard and tomatoes, A had lettuce, and My dad had lettuce, pickles, and mustard

How to make them:

Put your burger on a plate, dump some A-1 sauce on top(no science here, just pick an amount that you like)
Mix it up
Add crumbled Goldfish crackers(I used my hands but you could use a ziploc bag, or a processor)
Mix it up


Form mini patties, (I used a ball a little bigger than a golf ball)


Cook bacon(I make mine in the oven, to do say lay flat on a baking sheet or on a rack sitting on top of the baking sheet, bake at 350 for about 20 minutes)

Set grill to Medium high
Grill burgers flipping 4 times, on Medium high heat for about 15 minutes(this will depend on how you like your burgers cooked)
2 minutes before they are done, add cheese

Now just fix your burgers however you like them, and Enjoy!


Quick Easy Memorial Day Dessert


My munchkins and I are going up to my sisters to have a BBQ with the family, and I always like to have a special red, white, and blue dessert on Memorial Day, so I whipped up this simple parfait


 What you need:
Angel food cake, either home made or from the grocery store
1 pint of blueberries
2 pints of Strawberries
Cool Whip(I used extra creamy)

What to do:

Chunk up your angel food cake
Wash and Dice strawberries
Wash Blueberries
In a large bowl :
Layer 1- Angel Food Cake(1/2 of it)
Layer 2- Cool Whip(thin layer enough to cover the cake so it doesn’t get soggy from the fruit)
Layer 3-Diced Strawberries
Layer 4- Angel Food Cake (the rest)
Layer 5- Cool Whip (again enough to cover the cake)
Layer 6- Blueberries


Memorial Day cupcakes


What is more fun on memorial day than red white and blue cupcakes, okay so maybe there are a lot of fun things on Memorial day, but these are still pretty awesome!

To make these festive cupcakes here’s what ya need:

1 box of white or vanilla cake mix(and ingredients to make it)
blue and red food coloring
I made my own buttercream icing but you can also used canned vanilla, or buttercream icing
red and blue sugar

If you want the icing to look like this you would need an icing decorator bag, coupler, and a star tip, but you can put the icing on top however you feel comfortable

cupcake wrappers if preferred

Here’s what ya do

Prepare cake mix according to directions, but don’t bake yet
Seperate into 3 bowls
Dye one bowl of mix blue, 1 red and leave 1 white
now layer them into the cupcake tins I chose to do red, then white, then blue
Bake according to box mix instructions, or until a toothpick comes out clean
allow to cool, ice cupcakes(to get my effect I used the star tip and swirled it like an icecream cone) and top with the red and blue sugar
